Beef Kofta with mint/parsley yoghurt and pita.
Right now I can smell raw meat. Idk why. Nothing is cooking and I am in my room :/
But if I was making this meal, I'm sure it would explain the meat smell!
INGREDIENTS
1 tablespoon olive oil
1 small (120g) brown onion, chopped finely
2 cloves garlic, crushed
2 teaspoons ground cumin
1 tablespoon ground coriander
¼ teaspoon ground chilli
½ cup (75g) pine nuts, toasted, chopped coarsely
750g beef mince (not too lean)
1 egg
pitta or other flatbread, for serving
small lemons, halved, for serving
green salad, for serving
mint yogurt
1 cup (280g) yogurt
¾ cup finely shredded fresh mint
2 teaspoons maple syrup
2 teaspoons lemon juice
What to do?!
Heat the oil in a small frying pan; cook onion and garlic over moderate heat until translucent, but not brown.
Combine the onion, spices, pine nuts, beef and egg in a large bowl; season with salt to taste. Knead the ingredients into the beef – it’s important to massage the meat quite vigorously until it’s sticky ( this is a bit messy, but fun). Thread small handfuls (about 1/3 cup) of beef mixture onto skewers.
Cook beef skewers on heated, oiled grill plate or barbecue until browned and just cooked through.
Mint yogurt
Combine all the ingredients in a small bowl.
Serve the beef skewers with pitta, lemon halves and a green salad.
I served with lemon drizzled over red onion and beans. Yummy.
