Vanilla and Chocolate Chip Muffins

Inspired by a recipe in a magazine. I added chocolate chips to the mixture, you can obviously leave them out, or even add in frozen raspberries. Ohhh white chocolate added in with raspberries would be yummy. I has an idea!!

Ingredients:

  • 1/2 cup of softened butter
  • 1 cup of sugar
  • 1 tsp of vanilla extract
  • 2 eggs
  • 1 cup all purpose flour
  • 1/4 tsp of baking soda
  • 1 tsp of baking powder
  • a pinch of salt
  • 2/3 cup of milk
  • 2/3 cup of chocolate chips

Basic icing
  • 100g of butter
  • 2 cups of icing sugar
  • a drop or two of vanilla extract
  • food colouring of choice.
What to do?!

  1. Beat sugar, butter, baking powder, salt and baking soda together in a bowl.
  2. Add eggs and beat until fluffy.
  3. Beat in milk and vanilla, then your flour and chocolate chips until its just mixed.
  4. Put into your muffin try or cupcake cases and bake in the oven for 15-20 minutes.
  5. Take out and let sit on a rack to cool before icing.

Ta Da! You can play around with the icing. My piping bag had small nozzles on it, and I'm not very used to it, so I just stuck to simple icing haha. Sprinkles and chocolate flakes on top are very effective, and really yummy too!
