Tandoori Chicken Pilaf
What I made for dinner a few weeks back. Really yummy and easy to make too! Just don't go rubbing your eyes after touching the onion. You'll get sore, watery eyes D:


Ingredients
- 2 cups of Basmati rice
- 1 whole onion
- 1 tbsp of crushed garlic
- 2 chicken breast
- 2 cups of chicken stock
- 1 cup of frozen peas
- enough tandoori paste to cover chicken pieces
- 1 small tub of natural yogurt
- 1 Lebanese cucumber
What to do?!
- Cut chicken into small pieces and cover with the tandoori paste. Let marinate for half an hour in fridge.
- Dice the onion and cook until transparent with the garlic.
- Add the rice and cover with the onion/garlic. Add the chicken stock, stir until boiling then turn down heat and cover. Cook for 20 minutes.
- Cook the chicken in another pan. I am so paranoid about cooking chicken, I cook it atleast an extra 10 minutes haha.
- Put your peas into the rice mixture and cook for 5 more minutes.
- You are now done. Fill your bowl up with the rice, then place chicken on the top. A dollop of yogurt on top of it all with cucumber pieces helps to cool down the tandoori flavour.
