Tandoori Chicken Pilaf

What I made for dinner a few weeks back. Really yummy and easy to make too! Just don't go rubbing your eyes after touching the onion. You'll get sore, watery eyes D:



Ingredients

  • 2 cups of Basmati rice
  • 1 whole onion
  • 1 tbsp of crushed garlic
  • 2 chicken breast
  • 2 cups of chicken stock
  • 1 cup of frozen peas
  • enough tandoori paste to cover chicken pieces
  • 1 small tub of natural yogurt
  • 1 Lebanese cucumber


What to do?!

  1. Cut chicken into small pieces and cover with the tandoori paste. Let marinate for half an hour in fridge.
  2. Dice the onion and cook until transparent with the garlic.
  3. Add the rice and cover with the onion/garlic. Add the chicken stock, stir until boiling then turn down heat and cover. Cook for 20 minutes.
  4. Cook the chicken in another pan. I am so paranoid about cooking chicken, I cook it atleast an extra 10 minutes haha.
  5. Put your peas into the rice mixture and cook for 5 more minutes.
  6. You are now done. Fill your bowl up with the rice, then place chicken on the top. A dollop of yogurt on top of it all with cucumber pieces helps to cool down the tandoori flavour.
