Ham and Cheese Muffins
I was feeling like a cheese and ham toastie but we had run out of bread so decided to make muffins instead!
Used a recipe found online but tweeked it a bit.
Makes 12 muffins.
Ingredients:
- 1 cup of self raising flour
- a pinch of salt
- 1 cup of grated cheese
- 220g of diced champagne ham
- 1 egg
- 1 cup of milk
- 1/4 cup of oil
What to do?!
- Combine the flour and salt in one bowl.
- Whisk egg, milk and oil in another bowl. Then add your cheese and ham.
- Put wet mixture into dry and combine. Don't over mix though!!
- Fill your muffin tray 3/4 of the way and put in the oven for 20 minutes at about 150 degrees.
- Take out once golden and leave to cool in the tray.
They are delicious warm or cold. Could spread on a bit of butter for extra flavour if you want. Also chives or parsley in the mixture would have been uber yummy!
