Ham and Cheese Muffins

I was feeling like a cheese and ham toastie but we had run out of bread so decided to make muffins instead!

Used a recipe found online but tweeked it a bit.

(yummy! what they turned out like)

Makes 12 muffins.

Ingredients:
  • 1 cup of self raising flour
  • a pinch of salt
  • 1 cup of grated cheese
  • 220g of diced champagne ham
  • 1 egg
  • 1 cup of milk
  • 1/4 cup of oil

What to do?!
  1. Combine the flour and salt in one bowl.
  2. Whisk egg, milk and oil in another bowl. Then add your cheese and ham.
  3. Put wet mixture into dry and combine. Don't over mix though!!
  4. Fill your muffin tray 3/4 of the way and put in the oven for 20 minutes at about 150 degrees.
  5. Take out once golden and leave to cool in the tray.
They are delicious warm or cold. Could spread on a bit of butter for extra flavour if you want. Also chives or parsley in the mixture would have been uber yummy!
